Simple Homemade Crockpot Lemon Chicken for College Students

It’s time to throw away the ramen noodles! Over my four years at college I have learned that it is actually pretty easy and affordable to make good homemade healthy meals on a daily basis.

One thing that I personally think is a must for any college student is a crockpot. They are not too expensive and you can make a lot of easy meals in them. Crockpots make cooking delicious homemade meals very easy.  I can take 5 minutes to get everything ready and then set it aside till later while I do homework or go to class. One of my favorite recipes that I have found is for Homemade Lemon Chicken.

So lets get started with the recipe! I have listed below all of the ingredients that you will need to make homemade crockpot Lemon Chicken.


  • 1 or 2 chicken breasts
  • lemon juice (as much as you want)
  • 1/4 tsp. garlic powder
  • 2tb butter
  • 1tbs fresh parsley
  • 1/4tsp. salt
  • 1/4 tsp. thyme
  • 1/4 tsp. paprika

Keep in mind these are just the main ingredients. What is nice about crockpots is that you can literally add your whole meal in if you would like. For this recipe some people also add in rice or potatoes. The combinations are really endless so be creative!

What to do:

First you are going to want to prepare your chicken. I personally prefer thin chicken so I usually cut the chicken breasts in half but that is optional. Then rinse off the chicken and place it in the crock pot.

Next add the lemon juice, I usually add enough lemon juice to cover the bottom of the pot (if you are worried the chicken might be too lemony you can also dilute the juice with some water). You don’t want the chicken to dry out while it is cooking so make sure you add enough liquid.

The next step is to add in the butter and the rest of the seasonings. Finally let it cook on high for 6 hours.

You can then pair the chicken with some rice and a vegetable or put it over a salad and enjoy!

This may seem like a lot but I promise it is really easy and it takes only 5 mins to prepare, plus it tastes delicious!

For a college student this really is the perfect recipe for an easy homemade dinner. Why eat fast food or ramen noodles when you can easily whip up a delicious lemon chicken dinner?
